I work at Jersey Mikes and these cookies are soooo soft and yummy. Also pro tip when getting the gluten free bread I scoop some of the insides out (you can ask them to do this for you no problem). Just makes the sandwich a lot less dry overall since we use udis bread and we all know how that goes :)
