I need seasoning suggestions that I can add to ground chicken that doesn't add salt, sugar, or fat.

I have lost 15 pounds, 6.8 kilos by remaining in a calorie deficit since the 1st of the month.

A little back story. I'm pre diabetic, morbidly obese, and I've had health issues my entire adult life. I started my journey last may, weighing in at 465 pounds, 210.9 kilos. I stopped buying prepared foods and boxed foods, and started cooking with fresh ingredients, going so far as to baking my own bread. I was able to lose about 60 pounds, or 27.2 kilos by doing just that.

But my calorie count was between 4000 and 5000 calories per day, and my stomach was always upset.

Okay. I know this sounds extreme, but, I have been eating around 1200-1300 calories per day since the first, and I'm actually eating MORE food by volume than I was before. I make sure I have protein, carbs, and tons of veggies and salads, and I'm also working with my doctor and a nutritionist to find the right foods to start adding back into my diet. I will be adding 300 calories per month for the next 2 months.

I'm never actually hungry anymore, and everything about myself feels wonderful. I have more energy and I'm sleeping better, honestly, all through the night. After I eat, I feel as though I'm content, and very happy.

The problem I am having is, that I have cut out almost all sugar, salt, and fat from my diet, and that takes away a lot of seasoning blends I used to enjoy.

I grind my own chicken and make chicken patties by binding with egg whites, with each patty being around 120 calories.

What can i add to boost flavor without adding salt, sugar, or fat? I get bored eating the same thing, to the point that I have 7 different vinaigrettes so my salad never tastes the same.

I'm a recovering food addict, so the hardest part of this isn't the diet itself, it's the variation in what I can add to boost flavor.

Any suggestions are welcome.
