recommended pencil + app for note taking on iphone 15 pro max ?

Hi, i will be ordering the new iphone shortly but i'm looking for a way to manually write notes on it (yea that's righth, the old fashioned way). I'm simply quicker at writing than at typing.
I heard the new apple pencil (apple pencil 3, usb-c) doesn't allow for doing that, which is a shame.
Any other viable pencils out there (or maybe a hack to have the apple pencil work anyways) ?
Any particular app that'd go along with it for note taking ?
