Can we talk about the Open Table reservation desert in OTR?

Has anyone else experienced near impossibility to obtain a reservation at some restaurants in OTR?

With COVID, it seems the trend went from all 'no reservations' to 'only reservations on Open table'.

We love Pepp & Dolores, but it seems somehow reservations for 4+ are getting booked out like 4-5 months - In Feb the earliest possible Friday/Sat option was July....
