Buddha Bowl Lunch Prep
Chickpeas, Beans (Black and Kidney), Quinoa, Barley, Roasted Beets and Kale Florets, Shredded Carrot, Spinach, Sunflower Seeds, Cashews, & Cilantro. I use Sesame Dressing, but you can use anything. You can also add protein or extra fresh veggies or change out most of the items. These are a perfect lunch.
